Bajadera cake

bajadera cake

Bajadera is quite simple cake that you’ll love, if not for any other reason, then because it can be made really quickly (30 minutes) and that you don’t have to bake anything. The taste is divine…a lot of almonds, biscuits and chocolate. If you want you can add a little rum and it will have fantastic smell. In any case,  bajadera is really an excellent cake!

200 g almonds (or walnuts, hazelnuts)

150 g Petit beurre biscuits

200 g sugar

200 g butter

10 tablespoon water

5 table spoons of Nutella

Take almonds and grind them in a blender. Put the Petit beurre biscuits in a sturdy bag and  crush them with a rolling pin (like in the recipe of Venus balls).

Put the sugar and water on low heat and stir until the sugar is completely dissolved. Let it boil for 5 minutes. Then take it from the heat and add butter chopped to pieces. Stir until the butter is completely dissolved. Then add a mixture of almonds and biscuits. Stir well to get a compact mass. Divide the mixture into two parts. In one part add Nutella and stir well.  The second part of the mixture stays the same.

Cover a smaller deeper pan with a thin layer of butter, spread mixture with Nutella with your hands. Spread second part of the mixture over the mixture with nutella, also with your hands. Press well with your palms and flatten the cake.

Melt the chocolate on steam and than add oil, butter and water. Mix until you get a nice shiny mixture. Pour chocolate glaze over the cake. Put it away for few hours to cool down.

      Hello dear Daphne,
I also love trying out new recipes and since I often travel I bring home some traditional recipes for the cakes from the country I visited. So I picked up this recipe, Bajadera cake, when I was on vacation in Croatia … Bajadera are their traditional chocolate bars which are the inspiration for preparing this cake.
I hope you like it as much as I.
Have a nice day to you too.
