Cake with cranberries

Cake with cranberries is very tasty and delicious cake, it simply melts in your mouth. With meringue of egg whites and filling of cream and cranberries it gives you incredible refreshment. Instead cranberries you can put any refreshing fruit. It is important that fruit is sour because that gives a wonderful contrast to sweet meringue and whipped cream. You must try it, it’s easy to make!

Ingredients for meringue:

9 egg whites

300g sugar

1 table spoon apple vinegar

Instructions:

Whip the egg whites into a firm snow, add the sugar and vinegar and mix well (we have the same meringue in Icy wind cake).

On three pieces of parchment paper draw three circles diameter 24 cm (9,5 inches). Put the mixture for the meringue sheet into decorating bag and fill drawn circles. On the third sheet of paper next to the drawn  circle make small peaks and fill the rest of  parchment paper with them.

Cake with cranberries - meringue

Bake in preheated oven on 180°C (356°F) for 15 minutes.

Ingredients for filling:

500g fresh cranberries

500ml heavy cream

3 whip cream stabilizers

50g of sugar


Instructions:

Mix heavy cream and add whip cream stabilizers and sugar. Wash up and clean cranberries if necessary.

Cake with cranberries - cleaning cranberries

Take first meringue sheet and spread little bit of whipped cream over it. Sprinkle cranberries and put little bit whipped cream over it. Cover with second meringue sheet and do the same procedure. Finally put the last meringue sheet and spread small peaks all over the top and sprinkle with icing sugar. Put in the fridge to cool down and serve chilled.
