Coconut roll recipe

If you need a quick and delicious dessert and you don’t want to bake anything, then Coconut roll is the perfect dessert for you. It’s made out of two mixtures which you prepare without baking and all that you need is to leave it in the fridge for about an hour and you dessert is ready to serve! Let’s get started 😉

Ingredients for the dark mix US standards Metric Shop ingredients
Ground biscuits (Petit beurre or tea biscuits) 9 oz 250 g
Icing sugar 7 oz 200 g
Rum 1 spoon 1 spoon
Cocoa 1 spoon 1 spoon
Milk 1/2 cup 100 ml

Warm up the milk, but don’t let it boil. Mix all the ingredients and knead it with your hands until you get a even mixture. Use the rolling pin and evenly roll the mixture on parchment paper until it is ¼ of an inch thick.

Ingredients for white mixture US standard Metric Shop ingredients
Butter 5 oz 150 g
Icing sugar 5 oz 150 g
Shredded coconut 3.5 oz 100 g

Mix butter and icing sugar with mixer and add shredded coconut at the end. Evenly spread the white mixture over the brown mixture and lightly roll the rolling pin over it.

Coconut roll recipe procedure

Slowly and evenly roll both mixtures and put the coconut roll in plastic wrap and let it rest in the fridge for at least an hour. Put it out of the fridge, slice it, sprinkle with shredded coconut and serve. Enjoy!
