My grandmother gave me the recipe for these delicious cookies with apricot jam and walnuts. Every time when I prepare them, their fantastic fragrance and an irresistible taste take me back to my childhood and remind me of Christmas time when this cookies were always found on my grandmother’s table. Now I am preparing these cookies with apricot jam and walnuts for Christmas and my kids love them. If you haven’t already tried this delicious cookies be sure to try it because they are fantastic.
Ingredients for shortcrust pastry:
300g of flour
125g of icing sugar
4 egg yolk
Put softened butter to the flour and add icing sugar and yolks. Knead the dough and put it in the fridge for about 30 minutes. After 30 minutes take the dough from the fridge and put it on floured working surface. Roll out and transferr it to the baking sheet (medium size) lined with parchment paper. Align the dough with small rolling pin.
Bake at preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) for about 7 minutes.
Ingredients for filling:
4 egg whites
200g of sugar
200g walnuts half chopped and half ground
2 tablespoons of apricot jam
Mix egg whites while slowly adding sugar. Mix until you get strong a snow. Then add 100g of grounded walnuts and mix manually until it all combines together.
After about 7 minutes of baking, take the dough out from the oven (the dough should be half-baked) and cover it with apricot jam.
Pour mixed egg whites over it and sprinkle with chopped walnuts.
Take it back to the oven and continue baking at 150 degrees Celsius (302 degrees Fahrenheit) for about 15 minutes. When it is baked, take it out from the oven and put it away to cool down. When the cookies with apricot jam and walnuts are cooled, cut them on bars and serve!
