Danube waves

This extraordinary Danube waves cake I tried for the first time during my visit to Vienna. Blend of flavors in this cake just fascinated me and, of course, I could not leave Vienna without a recipe for this delicious cake. If you have never tried  Danube waves cake I advise you to do so as soon as possible!

Ingredients for biscuit:

4 yolks

4 egg whites

230 g sugar

1 teaspoon of baking powder

230 g of flour

2 tablespoons cocoa

100ml of water

100ml of milk

330ml of oil

500 g cherries


Mix egg whites until you get a strong snow and put it away. Then mix yolks with sugar until you get a smooth mixture. Slowly add water, oil, flour and baking powder and mix for about 2 minutes. Finally add egg whites snow but mix manually.

Pour half of the mixture into a greased and floured baking pan. In remaining half of the mixture add 2 tablespoons of cocoa and stir. Spread all over the yellow mixture with spoon.

Clean cherries from the pits and spread them over the mixture.

Danube waves cherriesBake in preheated oven at 180 degrees Celsius ( 352 degrees Fahrenheit) for  30 minutes. When the biscuit is baked pour 100ml of milk over it and put it away to cool down.

Ingredients for cream:

2 vanilla pudding powder

4 tablespoons of sugar

500ml of milk

200 g butter


Take 100ml of milk and add vanilla pudding powder  in it. Mix until pudding powder dissolves and put it away. Take 400ml of milk and add sugar. Put milk and sugar to cook until it boils. Then remove from the heat and stir dissolved pudding powder  in it. Take it back on low heat and stir until you get a firm mixture (we do the same procedure in Banana cake).

Put it away to cool down a little bit. When the mixture is still warm mix softened butter in it. Pour the cream over the biscuit.

Ingredients for chocolate topping:

300g dark chocolate

300ml heavy cream


Put the cream on low heat until it starts  to boil ( you can not allow it to boil ). In a separate bowl break dark chocolate into small pieces. Pour  hot cream over the chocolate and slowly stir until the chocolate melts completely. Put the chocolate cream to  cool down for about 10 minutes and then pour it over the cake. Put the cake  in the fridge over night. Serve chilled and enjoy.
