Very interesting  cake with delicious Jaffa cookies. For those who love Jaffa cookies this cake will be a hit. Jaffa cake is a cake which you will adore even if you don’t like Jaffa cookies. It is suitable for special occasions like birthdays, celebration of baptism, etc.  So, try it!

Ingredients for biscuit:

10 yolks

10 egg whites

10 table spoons sugar

20 table spoons ground walnuts

2 table spoons flour

Instructions for biscuit:

Mix 5 egg whites until you get a firm strong snow. When it is done put it away. Then mix 5 yolks with 5 table spoons of sugar, add 10 table spoons of ground walnuts and 1 table spoon of flour. Mix manually until you get a smooth mixture and then add egg whites snow and mix until everything is binded together. Pour mixture in a greased and floured baking sheet (big one, like on the picture below). Bake  in preheated oven at 200 degrees Celsius (392 degrees Fahrenheit) for 15 minutes.

When the biscuit is baked, take it out from the baking sheet and cut it in half lengthwise. Do the same proces to get another two biscuits. Finally you must have 4 biscuits.

Ingredients for white filling:

1l milk

15 table spoons of sugar

6 table spoons of corn starch

2 table spoons vanilla extract

250 g butter

Instructions for white filling:

Take 200ml of milk and add corn starch in it. Mix until cornstarch dissolves and put it away. Take 800ml of milk and add sugar. Put milk and sugar to cook until it boils. Then remove from the heat and stir dissolved cornstarch in it. Take it back on low heat and stir until you get a firm mixture. Put it away to cool down. When the mixture is cooled down mix softened butter in it.

Ingredients for brown filling:

300g sugar

200ml water

250g ground walnuts

100g dark chocolate

250g butter

Instructions for brown filling:

Take water and add sugar and put them on fire and cook until it starts to boil. Let it boil for about 5 minutes. Take it from the fire and add ground walnuts and melted chocolate. Mix manually until you get a smooth mixture. Put it away to cool down. When the mixture is cooled down add butter and mix until you get a smooth mixture.

Ingredients for compose:

500g Jaffa cookies

250ml orange juice

Instructions for compose:

Take the first biscuit and spread 1/4 of white filling over it. Take Jaffa cookies and dip them in orange juice.

Sread the dipped biscuits on a white cream with chocolate part facing down. Take second quarter of white cream and spread it on the Jaffa cookies.

Put on the second biscuit and cover it with all brown cream. Cover with third biscuit. Take third quarter of white cream and spread on the biscuit. Again take Jaffa cookies and dip them in orange juice. Spread the dipped biscuits on white cream with chocolate part facing down.

Take the last  quarter of white cream and spread it on Jaffa cookies. Cover with the last biscuit sheet. Apply whipped cream on the entire cake. Decorate as you wish.
