July slices (also known as the July pie) is definitely a cake that you have to try. You do not need special skills or some sort of extra costly and unusual ingredients to prepare this cake. Because it’s so simple I really like July slices cake. The top and bottom layer is crispy baked puff pastry crusts and in the middle is pretty juicy chocolate biscuit, and below and above is a fine white cream. So I recommend you to try this cake and enjoy in the combination of flavors.
Ingredients for biscuit:
500g puff pastry
5 egg yolks
5 egg whites
150 g sugar
150 g of chocolate
70 g of grounded walnuts
2 tablespoons of flour
1 tablespoon of baking powder
150ml of milk
Defrost puff pastry first. Roll out 250g of puff pastry on parchment paper in the dimension of the pan in which you will prepare July slices. You have to know that the dough will be a little reduced after baking so you have to roll it an inch wider than the pan, but don’t roll it bigger than the pan in which you are baking the dough. Pan for baking the dough must be bigger than the one for preparing the July slices. Pierce the dough with fork because otherwise it will swell during baking. We had the same procedure in Cremeschnitte recipe.
Put it in the pan in which you will prepare July slices. Do the same procedure with another 250g of puff pastry.
Mix the egg whites until you get a strong snow and put it away. Mix the egg yolks with sugar. Then add chocolate that you previously melted on steam. Slowly add grounded walnuts, flour and baking powder. Finally add egg whites snow and mix manually. Pour the mixture into the baking sheet lined with parchment paper. Bake in the preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) for 25 minutes. Take out baked biscuit from the baking sheet, remove the parchment paper and put it away to cool down. Pour 150 ml of warm milk over the cooled biscuit.
Ingredients for the cream:
6ooml of milk
6 tablespoons of flour
200g of butter
250g of icing sugar
2 tablespoons of vanilla extract
Take 200ml of milk and add flour in it. Mix until flour completely dissolves and put it away. Take 400ml of milk and add sugar and vanilla extract. Put milk and sugar to cook until it boils. Then remove from the heat and stir dissolved flour in it. Take it back on low heat and stir until you get a firm mixture. Put it away to cool down. When the mixture is cooled down add softened butter and mix well.
Take the first puff pastry crust and spread half of the cream over it. Cover with biscuit. Spread another half of the cream over biscuit and cover with second puff pastry crust.
Sprinkle with little bitt of icing sugar. Cut into slices and serve.
