Lemon bars recipe

If you like refreshing desserts that are easy to make then Lemon bars must be one of your favorite desserts. I personally love Lemon bars since childhood and although there are different variations of the recipe I prefer the classic recipe. This lemon bars have a specific texture and taste and your kids will love them because they are not sour. So, what are we waiting for, let’s get started with the recipe 😉

Ingredients for the crust:

All purpose Flour 1 cup 130 g
Powdered sugar ½ cup 60 g
Salt ¼ teaspoon ¼ teaspoon
Lemon zest 1 tablespoon 1 tablespoon
Usalted butter 4 oz 115 g

 

Preheat the oven at 350° F (176° C) and put the oven rack in the middle position. Use square 8 x 8 inch baking pan that is at least two inches deep and put a piece of parchment paper over it. Combine flour, powdered sugar, salt, lemon zest, and butter in the bowl, preferably in the food processor. Mix at slow speed until you get a dry but pebbly meal. Put the mixture in the prepared baking pan and spread it evenly. Then press it with your hands until you get an even layer.




Lemon bars recipe - crust

Put it in the oven and bake for 30 minutes until it becomes a pale gold color. Put it aside until you make the custard.

Ingredients for the custard:

Eggs 3 3
Granulated sugar 1 1/3 cup 270 g
Yolks 8 8
Lemon zest 1 tablespoon 1 tablespoon
Lemon juice 1 1/3 cup 310 ml

 

Use a 3 quart stainless steel saucepan and combine whole eggs, yolks, sugar, salt, and lemon zest. After it’s all combined whisk in lemon juice. Cook at low heat for about 3 minutes and stir constantly. Increase to medium heat and cook for another 8 minutes while stirring constantly. For those who love to measure exact temperature it must be 170° F (76° C) before you take it off the heat. Pour the mixture on the crust immediately and level it with the spatula. Cover the pan with aluminum foil and put it in the oven for about 10 minutes on 350° F (176° C). Regular recipes for lemon bars don’t have this final step but I advise you to spare this 10 minutes. Final baking in the oven gives the custard a completely different look and texture.

When you take it out of the oven leave it to cool to room temperature. Then use the parchment paper to take lemon bars out of the pan and onto a cutting board. Cut them in the shape you prefer, dust them with powdered sugar and serve. Bon appetite!
