This is the best recipe for muffins I have ever tried. You can do them  as a marble cake, you can add cocoa or chocolate, you can add fresh or dried fruit…be creative. This recipe for muffins are really the best and, believe me, when you try it you will never need another one.

Ingredients for 34 muffins:

4 whole eggs

1.5 cup sugar

1 cup of mineral water or milk

1 cup oil

2.5 cups  flour

1 baking powder

*cup = 300ml


Mix eggs and slowly add sugar. Mix until you get a foam mixture. Then add  mineral water or milk and oil. Slowly add flour and baking powder. Mix all the time until you get a smooth mixture. If you want to put cocoa as I did, then put 2 cups of flour and 1/2 cup of cocoa powder.

Put the cups in a muffin pan. Fill the cups to three quarters and put all  to bake in a preheated oven at 200 degrees Celsius (392 degrees Fahrenheit)  for about 15-18 minutes.

Ingredients for chocolate cream:

500 ml  cream

250g  dark chocolate


When muffins are baked, drill the hole in the middle of each muffin with the cupcake corer.

Warm the cream on low heat until it starts  to boil ( you can not allow it to boil ). In a separate bowl break dark chocolate to small pieces. Pour  hot cream over the chocolate and slowly stir until the chocolate melts completely. When chocolate cream cools down, put it  in the fridge for about 2 hours to harden.

Fill the holes in muffins with chocolate cream and put little bit of cream all over the muffins. Decorate as you wish. For Valentines day you can put fondant heart on each muffin like I did.

    What a presentation! Lovely muffins & to easy to prepare. As I never deal with cooking I think its easy & cool cooking to serve whole family & friends because with these ingredients we can prepare 34 muffins at a time.
