Pancake Cake

If you like pancakes this is the perfect cake for you. It is made out of crepes, a very thin pancakes, it’s super easy to make and it tastes fantastic. All you need is a classic cake mold and a similar size pan and you are ready to go. Also, this cake is opened for experiments because you can use different fruits and syrups. Don’t be afraid to try out new stuff, let’s make Pancake Cake 😉


1 crepe mix

3½ cups (800 ml) of water

oil for baking crepes

2 eggs

3½ oz (100 g) of sugar

2 bags (0.64 oz) of vanilla sugar

17½ oz (500 g) of heavy cream

17½ oz (500 g) of cottage cheese

10½ oz (300 g) of fresh blueberries

1½ oz of sliced almonds

2-3 spoons of agave nectar


Mix the crepe mixture with water and mix continuously by hand or by mixer until it dissolves completely. Leave the mixture to rest for 15-20 minutes. Bake the crepes on a hot oiled pan or in the crepe maker.

Pancake Cake - baking

Put eggs, sugar, vanilla sugar, heavy cream and cottage cheese and mix with mixer until you get a smooth cream. Take round cake pan of similar size as the crepes and put parchment paper on the bottom. Put crepe on the bottom and spread previously mixed cream over the crepe. Repeat the procedure until you run out of cream or crepes. You should have at least ten crepes in your cake and spread the cream over the last crepe. Spread sliced almonds over the top and put in a preheated oven on 356 °F (180 °C) and bake until almonds change their color. Spread agave nectar, or honey, and serve.
