Russian hats (Fur hats)

Russian hats or fur hats are delicious cookies that are indispensable part of every special occasions. It is assumed that are named Russian fur hats because of the shape and appearance.  This cookies with coconut, for all their fans, and even for those who don’t prefer coconut, will be a special treat. So tasty, soft and decorative, who can  resist!

Ingredients for biscuit:

8 yolks

16 tablespoons of sugar

16 tablespoons of flour

2 tablespoons of warm water

2 tablespoons of cocoa

1 tablespoon of baking powder

8 egg whites


Mix egg whites until you get a strong snow and put it away. Then mix yolks with sugar until you get a smooth mixture. Slowly add water, flour and baking powder and mix for about 2 minutes. Finally add egg whites snow but mix manually. Pour it in a greased and floured baking sheet and bake in preheated oven at 180 degrees Celsius ( 352 degrees Fahrenheit) for  20 minutes. When the biscuit is baked put it away to cool down.

Ingredients for filling:

500ml milk

5 tablespoons of sugar

10 tablespoons of flour

1 tablespoon vanilla extract

250g butter


Put 350 ml of milk on low heat in which you previously added sugar and vanilla extract. In the meantime, mix 150ml of milk and flour. When the milk with sugar starts to boil take it from the heat and add milk with flour. Mix well all the time. Then put it back on the heat and stir continuously until you get a firm mixture. When it is over put it away to cool down. When it cools down add softened butter and mix until you get a smooth mixture.

Ingredients for decoration:

150g dark chocolate

5 tablespoons of oil

200g of coconut

Take the cooled biscuit and cut out circles with round cookie cutter.

Take one biscuit circle and put one teaspoon of filling on it and then cover with the second biscuit circle.

Spread  filling all the way around and roll in coconut.

Melt the chocolate on steam and than add oil. Mix until you get a nice shiny mixture. Put the chocolate glaze on top of each cookie with teaspoon. Put the Russian hats at cool place and serve another day.
