Schwarzwalder cake (alson known as Schwarzwalder Kirschtorte or Black forrest cake) is a cream cake and it is the most popular German cake. This is a classic German cake that is known all around the world. The main ingredients of Schwarzwalder cake are biscuit, chocolate, cherry filling, heavy cream and pieces of chocolate for decoration. There are so many recipes for this wonderful Schwarzwalder cake but I’ll just give you the original German recipe that I got from my friend in Germany.
Ingredients for biscuit:
6 egg yolks
6 tablespoons of warm water
300 g of sugar
1 tablespoon of vanilla extract
300 g of flour
1 tablespoon of baking powder
3 tablespoons of dark cocoa
6 egg whites
100ml of cherry brandy or syrup
Mix egg whites until you get a strong snow and when it is done put it away. Mix yolks with sugar until you get a smooth mixture. Add water, vanilla extract, flour, baking powder and cocoa. Then add egg whites but mix manually. Mix until you get a fine mixture. Pour it in a greased and floured round baking pan (28cm/11 inches diameter). Bake in preheated oven at 180 degrees Celsius ( 352 degrees Fahrenheit) for 20 minutes. When it is over leave it to cool down. When it is cooled cut it into three pieces to get three equal biscuits.
Each biscuit sprinkle with cherry brandy or cherry syrup.
Ingredients for filling:
1 jar of pitted cherries compote
2 tablespoons of sugar
2 tablespoons of cornstarch
750 ml of heavy cream
Take little bit of juice from cherries compote and add cornstarch and sugar in it. Mix until cornstarch and sugar dissolves and put it away. Put cherries with rest of juice from compote on heat until it boils.
Then remove from the heat and stir dissolved cornstarch and sugar in it. Take it back on low heat and stir until you get a firm mixture.
Cherry filling immediately spread on all three biscuits.
Whip the cream and add cream stabilizers. Spread whipped cream on all three biscuits. It must cover cherry filling completely. Put the biscuits on each other with cherry filling and cream facing side up. Cover the entire cake with whipped cream and decorate with grated or chopped chocolate. Chill well and serve with a cup of coffee or hot chocolate.
