Let’s get started with the recipe for this tasty rolls 😉
Ingredients list for the dough
|Flour||35 oz||1 kg|
|Salt||1 spoon||1 spoon|
|Sugar||1 spoon||1 spoon|
|Milk||1 ¼ cups||3 dcl|
|Instant yeast||¼ oz||7 grams|
|Oil||¾ cup||2 dcl|
|Water||¾ cup||2 dcl|
Procedure for the dough
The secret to perfect Tasty rolls is good dough and good dough can’t be made in a hurry 😉 Pour warm milk into the bowl of a stand mixer fitted with a dough hook attachment or a special dough mixer. If you do not own a stand mixer, a regular large mixing bowl will do. Sprinkle yeast and 1 spoon of sugar on top of the milk. Give it a light stir with a spoon and allow to sit for 5 minutes. The mixture should be frothy after 5 minutes.
With the stand mixer running on low speed, add the water, salt, oil and ¾ of the flour. Beat on low speed for about 1 minute, then add remaining ¼ of the flour. Beat on low speed for 1 minute until it all combines. The dough should be thick, yet soft and only slightly sticky. It should pull away from the sides of the bowl as it mixes. When it does, it is ready to knead. If, however, the dough is too sticky to handle add more flour, but only one spoon at a time. Make sure you do not add too much extra flour because you want a soft, slightly sticky dough.
Form the dough into a ball and turn it out onto a lightly floured surface. Knead it for about 2 minutes and then place into a oiled bowl. Turn the dough over to coat all sides and cover the bowl with plastic wrap and place it in a warm environment to rise until doubled. It is best to wait about 2 hours. For this warm environment you can preheat the oven to 200°F (93°C) and then turn the oven off and place the bowl inside the warmish oven. Once doubled in size, punch down the dough to release any air bubbles. Remove dough from the bowl and turn it out onto a lightly floured surface. Punch down again to release any more air bubbles if needed. Divide the dough into 4 equal balls and start with the filling.
Ingredients list for the filling
|Margarine||9 oz||250 grams|
|Flour||4 spoons||4 spoons|
|Salt||1 spoon||1 spoon|
|Cheddar cheese||17.5 oz||500 grams|
|Sour cream||¾ cup||2 dcl|
Leave the margarine (if you don’t have margarine you can use unsalted butter) on room temperature to soften. Put margarine, yolks, salt and sour cream into a mixing bowl and mix on low speed. When it all combines add the flour and mix until you get a smooth mixture. Divide the filling into 4 equal parts because you have 4 balls of dough.
Take one ball of dough and roll it with rolling pin into square piece like in the picture below. Then spread ¼ of the filling over the dough and spread grated cheese over it. Roll the dough and cut it into triangles like in the picture below.
Put triangles into a baking sheet covered with parchment paper. Brush the triangles with yolks and spread sesame over it if you like! The trick with baking is that you have to preheat the oven to 570 ° Fahrenheit (300° Celsius) and when the oven is preheated lower it to 390° Fahrenheit (200° Celsius) and then put the rolls in the oven. Bake them for about 20 minutes but it’s best to check them visually from time to time because they are perfect when they have nice golden color. You Tasty rolls are now ready to serve, you can eat them hot, warm or cold, they are equally delicious. Enjoy!
