Vanilla cookies

Vanilla cookies are perfect for holiday season when you want to have tasty little cookies on the coffee table for decoration and quick sweet snack. This is my grandmas’ recipe and this cookies are perfect, crispy and they melt in your mouth. You can sprinkle them with icing sugar or coconut flour, both taste great. The recipe is easy with only few ingredients, but the cookies are fantastic.

Flour 9 oz 250 g
Butter 7.5 oz 210 g
Ground walnuts 3.5 oz 100 g
Sugar 2.5 oz 70 g

Take cold butter from the fridge and cut it into small cubes. Don’t leave your butter at room temperature, it must be cold! Mix flour, butter, walnuts and sugar with your hands and knead until you get a smooth dough! Wrap the dough into aluminium foil and leave it in the fridge for at least one hour.

Preheat the oven at 320° Fahrenheit (160° Celsius) and start shaping your cookies. Your hands must not be wet and it is best that you wash your hands in cold water before shaping because you don’t want to overheat the dough. If you hands are wet or you hold the dough to much in your hands, the butter will start to melt and you will ruin the cookies. Put the dough on your work surface and gently roll it with your fingers. Then cut the dough into small pieces and roll them also. After that, just bent the ends of every small piece of the dough. We presented you this shape of vanilla cookies, but basically you can make them what ever shape you like.

When you are finished with shaping of your cookies, put them on the cookie pan and bake for 8 to 10 minutes. Don’t bake them too long, if they start to get a brownish color you baked them too long, 10 minutes is the maximum time in the oven. Roll the cookies in icing sugar while they’re still hot and enjoy!
